Coffee is an agricultural product. In a farm not all the coffee is of the same quality. Coffee of excellent quality is not usually exceed the 25% of total production. Because 80% of world coffee production, is produced in very small farms, the best coffee and coffee lots, are very difficult to find and commercially introduced. So in order a farm to produce Speciality Coffee should be autonomous with its own technical means for the separation, processing (mill) and storage of green coffee.

According to the Speciality Coffee Association of Europe, specialty coffee is defined as:“Speciality coffee is defined as a crafted quality coffee-based beverage, which is judged by the consumer (in a limited marketplace at a given time) to have a unique quality, a distinct taste and personality different from, and superior to, the common coffee beverages offered. The beverage is based on beans that have been grown in an accurately defined area, and which meet the highest standards for green coffee and for its roasting, storage and brewing.”
